Got an email today about making your own energy bars. Most of them were super complicated, but the first one looked pretty simple. Unfortunately, it had banana in it, which I can't have because I'm super allergic. So I decided to mess around with the recipe, and came up with these, which are super yummy, with no sweeteners, and full of energy! Perfect for me for breakfast, because having to be to work for 6:45 am, and really liking my bed, means half of the time I go without food (I know, I know).
I wrote down the recipe as best as I could remember, because I really want to make them again. Most of the measurements are informed guesses, because the only think I measured was the oats. I have a bad habit of doing that, but luckily I've been baking for so long that I can pretty well guess bang on when it comes to my measurements. I think the best thing about this recipe is how versatile it is! I used peanut butter, almond extract, walnuts, and a mix of raisins and currants, but you could use anything you wanted!

~ 3/4 cup nut butter
1 tsp vanilla (or almond) extract
2 cups oats
1/2 cup dried fruit
1/3 cup nuts, roughly chopped
~ 1/3 cup dates, stewed in ~1/4 cup water

Preheat your oven to 350* F. In a small pan, stew the dates in the water until the liquid is thick. In a medium mixing bowl, combine the nut butter, vanilla extract, oats, fruit, and nuts. Pour liquid off of dates into mixture, then roughly chop the remaining solid pieces of date.
Spread mixture in the bottom of a greased 9x9 pan (or put in muffin tins like I did) and bake for 20-25 minutes.
a 9x9 pan should make 9 bars. I came out with 16 "pucks" in muffin tins. Perfect for breakfast, snack, or dessert!
